• 1 pound ground turkey

•One 14.5-ounce can black beans, drained and rinsed

•1 cup prepared fresh salsa

•1 chipotle in adobe, chopped, plus 1 tablespoon adobo sauce

•12 corn tortillas

INSTRUCTIONS

•Heat a large skillet over medium heat and add the ground turkey or chicken. Cook until browned and cooked through, breaking it up into crumbles with a spatula

•Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more

•Char the tortillas over an open flame lightly. Set aside wrapped in a clean kitchen towel to steam

•Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream

2. Stir Fried Beef and Vegetables

RECIPES

•1 pound beef, sliced thinly

•2 tablespoon soy sauce

•1 tablespoon corn-starch

•1 tablespoon vegetable oil

•2 grated cloves garlic

•1 sliced onion

•2 cups broccoli florets

•Salt and pepper

INSTRUCTIONS

•Combine the soy sauce and corn-starch in a bowl.

•Add the thinly sliced beef and toss to coat. Let it marinate for about 15 minutes

•Heat the vegetable oil in a large skillet over medium-high heat

•Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds

•Add the marinated beef to the skillet and stir-fry until its brown

•Add the sliced onion, bell pepper in the same skillet until the vegetables are crispy

•Return the cooked beef to the skillet and mix everything together.

•Add salt and pepper to taste

•You can sprinkle sesame seeds and green onions to garnish it, if you want

Chicken Tamale Pie

•3 cups diced cooked chicken

•1 ½ cups prepared salsa

•One 15-ounced can black beans, drained and rinsed

•1 ½ cups chicken broth

•1 tablespoon chili powder

•2 sliced scallions¾ cup of cornmeal

1 cup shredded sharp of Cheddar cheese

•1 tablespoon unsalted butter

•Kosher salt and freshly ground black pepper

•Sour cream, for serving

INSTRUCTIONS

•Heat and stir the chicken, salsa beans, ½ cup of broth and the chili powder in a 10-inch cast-iron skillet over medium heat.

•Stir in the scallions and remove from the heat

•Combine the cornmeal with the remaining 1 cup broth and 1 cup water in a medium pan.

•Bring to a simmer over medium heat for 5-7 minutes as you stir until it is thick

•Remove from the heat and stir in the cheese and butter

•Season with ¼ teaspoon salt and ¼ teaspoon pepper

•Spread the cornmeal mixture over the filling and bake until it is cooked well for 30 minutes

•Serve with sour cream when it is ready
